 Here’s a delicious, easy recipe for the spinach & cheese puff pastry pockets exactly like in your pictures — golden, crispy outside, creamy cheesy spinach inside! 🥐🧀🌿

Spinach & Cheese Puff Pastry Pockets

Ingredients


For the filling


300 g fresh spinach (or 200 g frozen, thawed & drained)

200 g ricotta cheese

150 g mozzarella (shredded)

50 g feta cheese (optional but delicious!)

2 cloves garlic, minced

1 tbsp olive oil

Salt & pepper to taste

Pinch of nutmeg (optional)

For the pastry


1 package puff pastry (2 sheets)

1 egg (for brushing)

Instructions


1. Prepare the spinach


Heat olive oil in a pan.

Add garlic, sauté 30 seconds.

Add chopped spinach and cook until wilted (or just heat if using frozen).

Let cool slightly.

2. Make the filling


Mix in a bowl:


cooked spinach

ricotta

mozzarella

feta

salt, pepper, nutmeg

Stir until creamy and well combined.


3. Shape the pockets


Roll out your puff pastry.

Cut into squares (10×10 cm).

Place a spoonful of filling in the center.

Fold diagonally into triangles.

Seal the edges with a fork (like in the photo).

4. Brush & bake


Place on a baking tray lined with parchment.

Brush with beaten egg.

Bake at 200°C (400°F) for 18–22 minutes until golden and puffed.
