Glazed Lamb Chops with Creamy Mashed Potatoes

 

Ingredients:


For the Lamb Chops:


4 lamb chops


2 tbsp olive oil


2 tbsp honey


2 tbsp Dijon mustard


1 tbsp fresh rosemary, chopped


1 garlic clove, minced


Salt and pepper to taste


For the Mashed Potatoes:


4 large potatoes, peeled and cubed


1/4 cup butter


1/2 cup heavy cream


Salt and pepper to taste


Preparation:


For the Mashed Potatoes: Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, heavy cream, salt, and pepper until smooth and creamy. Set aside.


For the Lamb Chops: Preheat the oven to 400°F (200°C). Season lamb chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side until browned.


In a small bowl, mix honey, Dijon mustard, rosemary, and garlic. Brush the glaze over the lamb chops, then transfer to the oven and bake for 8-10 minutes, or until desired doneness is reached.


Serve the glazed lamb chops with creamy mashed potatoes. Enjoy!
